Surprise Chocolate Fudge

  • 1 can pinto beans, rinsed and drained
  • 1 cup baking cocoa
  • ¾ c butter, melted
  • 1 T vanilla powder
  • 7 ½ c powdered sugar
  • 1 c walnuts

 

In a microwave-safe dish, mash beans with a fork until smooth; cover and microwave for 1½ minutes or until heated through. Add cocoa, butter & vanilla. Mixture will be thick. Slowly stir in sugar; add nuts. Press mixture into a 9-inch pan, coated with Vegalene. Cover and refrigerate until firm. Cut into 1″ pieces. Yield: about 3 ½ pounds.

 

 


  I’m going to try to replace some of that sugar & baking cocoa with milk chocolate chips. I would also puree the beans in the Bosch Food Processor to get them as smooth as possible.
