Lemon Bars

  • 2 c barley flour
  • 2 c rolled oats
  • 1 c coconut
  • 1/2 c sugar
  • 1/2 t salt
  • 1 c maple syrup
  • 3/4 c olive oil
  • 6 T lemon juice
  • 3 T lemon extract
  • 3 T lemon zest
  • 2 t vanilla
  • 1 c dates

 

 

 

Mix altogether. Bake in an 8×8 inch pan at 350° for 25 minutes or until golden. Makes 1 dozen bars.
