Nore’s Granola Muffins

Combine and set aside:

 

  • 1 cup plain or flavored yogurt
  • 1 cup granola

 

Combine:

 

  • 1⅓ cup Prairie Gold
  • ⅓ cup sugar
  • 2 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt

 

Mix:

 

  • 2 eggs
  • ¼ cup oil (or applesauce instead of oil)
  • yogurt mixture

 

Blend all mixtures with as few strokes as possible. Fill muffin tins ¾ full, bake for 20-25 min at 350°-400°.

 

 

 


 

Optional additions:

 

  • chopped nuts
  • dried fruit
  • chopped strawberries
  • chopped apples
  • any kind chopped fresh fruit
