Chicken Enchiladas on Whole Wheat Tortillas

In saucepan, combine:


  • 4 cup cooked chicken
  • chopped onion
  • 1 teaspoon cumin
  • 2 cups cooked spinach or beet greens
  • 8 oz cream cheese

Mix together:

  • 2 cups tomato sauce
  • ½ cup salsa
  • 1 teaspoon cumin



  Spread ½ cup of tomato mixture in bottom of 9×13 inch pan. Before I removed the tortillas from the griddle, I placed some of the chicken filling on it, rolled it up, and placed it in the pan. Continue to fill pan. Pour remaining tomato mixture on tortillas. Grate cheddar cheese over top and bake about 25 minutes.    This is DELICIOUS!!!!
