  BUTTERMILK BUSCUITS

  • 2 C whole wheat flour  (I used soaked all purpose mix ~ =   parts spelt, brn rice, barley)
  • 1 T baking powder
  • 1/2 t baking soda
  • 2 t sugar—optional (I used none)
  • 1/2 t salt

 

 

Mix together then use a pastry cutter , the Bosch

 food processor, or wire whips, to make a crumble

 texture with 1 stick COLD butter.(I used palm

 fruit shortening instead).

 

 


   Then add 1 C COLD buttermilk. (I added 1/4 C buttermilk powder to the dry ing, then 1 C water). Roll dough onto a floured surface ~ it will be quite sticky. Fold in sides of dough. Repeat several times. Roll a final time, about 1/2—3/4” thick. Cut with a SHARP cutter. Place on a cookie sheet, close together. Bake at 450—HOT oven for 10—12 minutes.
