  Brown Rice Quiche & Crust

Crust:

 

  • 3 C cooked brown rice
  • 2-3 egg whites
  • salt/pepper to taste

 

Mix and press into greased 9 x 13 pan. Bake at 350 until golden.

 

Quiche:

 

  • Any meat, (or not) diced & cooked
  • ½ t Italian seasoning
  • 1-2 C cheese
  • ⅓ C chopped onion
  • ⅓ – ⅔ C several veggies
  • 6-8 eggs
  • 3 C heavy cream or 2 C whole milk
  • ½ t salt & pepper

 

 


  Mix & pour into the prepared crust & bake at 425 for 15 min. Turn heat down & bake at 325° for 30 minutes Let stand 10 minutes before cutting. *Quick crust – Process a couple of slices of bread in your stick blender. Spread the crumbs in the pie plate. Add toppings, pour on liquids & bake.
