  Brown Rice Pudding

  • 2½ cups cooked brown rice
  • 3 cups milk/cream
  • 3 eggs
  • ½ cup sugar or 1/3 cup honey
  • 2 tsp vanilla
  • ½ tsp cinnamon
  • 1 cup dried fruit and nuts to taste

 

 


  Mix milk, sugar, and cinnamon in a pan and heat until almost boiling. Remove from heat for 5-10 minutes and then pour ½ cup hot milk mixture into beaten eggs and vanilla to temper the eggs. Add the egg mixture back into the milk, then stir in rice. Pour into a greased 2 quart uncovered baking dish. Place this dish into a larger pan filled with water halfway up the sides of the pudding dish. Bake 50-70 minutes, until pudding is set. Serve warm or chilled.
