            Black Bean GF Chocolate Cake  
 
 
           This will become your favorite chocolate cake!

1. Preheat oven to 350. Prepare square pan or muffin tin.
 2. In our blender or food processor, combine:
           1 can or 1 ¾ C cooked black beans, drain & rinse (kidney)
          
5 eggs                                              1 T vanilla powder 
          
6 T E V Coconut oil                            ½ C E C J sugar or maple syrup
          
4 T cocoa powder                              1 t baking powder
          
1 T fresh filtered water                        ½ t baking soda

 

     3. Process until smooth, scraping as necessary. Thin batter is OK. Pour into prepared pan.    Bake for 20 – 30 minutes according to pan size, until toothpick comes out clean.

 

     4. Remove from oven & cool on rack. Delicious w/o icing.

 

          ICING

                              Whip in food processor…

                ¼ c cocoa powder                           ¼  C maple syrup

                6 T E V Coconut oil, liquefied                     

                ½ t vanilla powder                           pinch salt

Pour over cake. Slice & enjoy.  Store leftovers in refrigerator.
