Summer Greetings! Nothing quite so restoring to the soul as long summer days and nights in Alaska, especially June! I love the family gatherings, peaceful walks, outdoor events. What a great change from the chilly winter days! But along with summer… Everyone has their minds on gardens, fish, hikes, and camping trips. Hope you will take the time to prepare healthful snacks and meals for all the adventures! Strength and energy from good nutrition makes for happier memories and bodies.

We will still continue our bread class and specialty class schedule through summer. What class suggestions do you have? Shoot me an email! The Pasta class last week was great!

     The Palmer Granary is well stocked with all your favorite consumables and equipment. A      shipment of Bosches & Mills arrived today with consumables on the heels next week.

MARBLEIZED RYE & REGULAR WHOLE GRAIN BREAD  ~ Saturday, June 2nd at 9:30 AM $10/person. One of my favorites is marbleized rye. Starting with a batch of regular Whole Grain Bread, then a batch of delicious Rye Bread, we’ll swirl them together for an amazing taste treat! Some corned beef & cabbage will round out the meal! Everybody takes home some bread as this class produces at least 10 loaves. Newbies are welcome as all the grains are explained and baking methods demonstrated. NOTE THE EARLY START TIME! We have a one year old granddaughter party to attend.

 

DEHYDRATOR 101 & 201 ~ Thursday, June 21st at 6 PM, $10/person. My Filter Pro Dehydrator runs most every day! I love it & almost consider it a Kitchen Necessity! My hubby gathered & dehydrated Devil’s Club buds. His ‘herbologist’ friend said they are pretty potent! We’ll talk about, sample & demo DRIED..

CITRUS NUT & FRUIT BREAD ~ Saturday, July 7th at 10 AM, $10/person. Starting with our basic bread, let’s add a lighter citrus flavor, dried fruit, nuts & seeds. Another winning combination for summer gatherings. Chicken salad & Crème Brule, both compliments of the Sizzle Pot ~ round out our lunch for a king.

 

QUICK CAMP FOOD IDEAS

 

Divide out some bread dough for home made hamburger & hot dog buns. They ‘grow’ unexpectedly as they rise, so try less than you think. Roll into a bun or log. Let rise & bake!

Bake cinnamon rolls or pizza rolls. Freeze for the trip.

Make hot cereal ahead, then freeze ~ freshly rolled grain, milk powder, salt, raisins or other dried fruit, a little sugar. All you need is the hot water!

Microwave Popcorn ~ To a lunch size paper bag add: ¼ C popcorn, 2 -3 T coconut oil, Pink salt &/or other flavor. Fold down the bag & tape. Cook on high for 2 to 3 minutes. Watch the steam.

Make your own trail mix! We have plenty of pumpkin seeds, sunflower seeds, slivered almonds, walnuts, cashews & pecans. Don’t forget the dark chocolate chips, cranberries, dried cherries & chipped coconut. This is quick energy from REAL food! If you must, we have the healthy version of MnMs, Rainbow Drops.

In the morning, mix up some yogurt, chia seeds, & berries. Bring along the granola & there is your mid morning snack, a burst of energy & flavor.

Pancake Mix ~ 8 C freshly milled grain (I use 4 C Prairie Gold & 4 C 7 Grain Mix), 7 T Rumford Baking Powder, 1 C buttermilk or Morning Moos Powder, 2 T sugar, 4 t pink salt. To 3 C of mix, add 2 eggs, ¼ oil, & 1 ¾ C water. It will thicken, so add more liquid as necessary.

Freeze ahead batches of shredded beef or chicken, soups, chili. Use this as part of your ice to keep the cooler chilled.

Some folks mention how they heat our delicious broth mixes to curb the chill around the camp fire. A tablespoon or two in a cup of hot water warms the belly!
